This Crunchy Cucumber Tomato Salad is a staple in our home from spring up until completion of summertime and I hope you enjoy this simple salad too!
When I think about simple, tasty, refreshing, and nutritious salads for the summer season, this is the one that enters your mind.
Both cucumbers and tomatoes– the stars of this recipe– are both hydrating veggies, available in the summer season, and abundant in antioxidants. Additionally, cucumbers are one of the simplest vegetables to grow (in my viewpoint).
Cucumbers consist of vitamin K, potassium, pantothenic acid, phosphorus, copper, vitamin C, and magnesium. Tomatoes are abundant in anti-oxidants, most notably lycopene. In addition to chopped tomatoes and cucumbers, I like adding vibrant red onion, tons of fresh dill and parsley, and periodically castelvetrano olives.
What I take pleasure in most about this salad is the simpleness and flexibility– it takes about 10 minutes to throw up and can be enjoyed as a side meal or a meal.
